Simple Yellow Cookies

Easy Cookies for beginners from a beginner.. :) These cookies tasted like the tiny yellow egg biscuits that available in bakeries of Kerala.
Ingredients
Maida / All purpose flour 1 1/2 cups
sugar 3/4 cup
baking powder 1 tsp
vanilla 1/2 tsp
pure ghee 2 Tbsp
salt 1 pinch
egg 1
Method
Beat / blend sugar and ghee. Add egg and blend it again. Add the remaining ingredients and make a dough. If you find the flour is not enough (too soft to form dough), add little more spoons. This depends on the size of the egg used. Keep the prepared dough in the fridge. Better keep it overnight. Preheat oven for 15 minutes.
Take the dough out . Make small balls and press it between palms.(Or use a cookie cutter).Let them have 1/4 inch thickness. Grease baking sheet with little oil, place the prepared cookies on it, bake it for 15 minutes in 180 degrees. Check and if the bottom side is slightly brown take it out and let it cool..

Rava / Semolina Oats payasam

Ingredients
Rava 2 tbsp
oats 2 tbsp
sugar 4 tbsp
ghee 1 tbsp
milk 2 cups
cardamom 1
raisins and cashew nuts few
Method
Heat ghee. Roast raisins and cashews. Add rawa and oats. Roast them until the color slightly changes.
Add sugar, crushed cardamom and milk. Bring to boil stirring continuously. When this begins to thick remove from fire. Add milk according to the thickness you like.
This is a good option for the children who are lazy to eat. If you make this for your kid, use butter or pure ghee instead of normal ghee.
Vegetable Noodles

Ingredients
Noodles packets 3
Beans 10
carrot 1
cabbage chopped 1 cup
capsicum chopped 1
onion 1
ginger julienned 1/2 inch
soya sauce 2 tb sps
pepper powder 2 tsp
oil
salt
Method
Cook the noodles in water with the seasonings available with it. Drain water and keep it aside.
Chop beans and carrot into thin long strips. (You can use other vegetables too)
Heat oil, saute chopped onion with ginger. Don't saute much as we do for curries. Then add chopped beans and carrot with it. Add little salt and stir until they are nearly cooked. Add cabbages, capsicum , pepper powder and soya sauce and stir. Add noodles too. Mix well. Have with tomato ketchup.
Pazham Vaattiyathu / Ghee Fried Bananas

How to prepare
Banana 1
ghee 1 table spoon
sugar little
Chop banana into thin pieces.Heat ghee in a pan. Fry banana pieces in this till golden brown. Flip over and fry the other side too.Remove from fire, sprinkle little sugar and serve hot.
For making this, chop bananas into small pieces and fry in ghee. Break an egg after the sides of banana slices are fried well. Stir well till the egg is cooked. Sprinkle little sugar and cardamom powder over it. Remove from fire. Serve hot.
Chakkarappayar / Red Cow Peas Jaggery Snack

Ingredients and Method
Unakka payar/ Red cow peas 1 cup cooked well
Jaggery 1 block
coconut grated 2 table spoons
Pound or chop jaggery.
Mix everything together. Should mix very well. You have to add little salt while cooking dry red beans. You can make this with cherupayar / Moong Gram also. This is a highly nutritious and a very simple snack.
Semiya Bread Kesari

Ingredients and method
Semiya 4 tablespoon
Bread 4 slices
Coconut milk 1 cup thick
Milk 2 cup
Sugar 5 tablespoon
Ghee 1 tablespoon
Cardamom powder 1 pinch
Kismis and Cashew nuts few
Cut bread into small pieces.
Heat ghee, roast kismis and cashews and keep aside. In the remaining ghee roast semiya till golden brown. Then add bread pieces and fry for few seconds. Remove from fire and add coconut milk and milk into this. Keep this for half an hour. Heat sugar with 1 spoon water. When it begins to boil add the above mixture. Boil till thick. Remove from fire and sprinkle cardomom powder over it.

Apple Paayasam

Ingredients
Apples 2
Milk 1 cup
Sugar 1 cup
Cardamoms 2 or 3
Butter 1 table spoon
Nuts or raisins few
Milk powder 2 table spoon
How to prepare
Chop apples into very thin(remove skin).
Boil milk and reduce to half, add powdered cardamoms, apples and sugar into this.
Stir until thick and apples are cooked.
Mix milk powder with little water to make a thick solution and pour this in to the above.
Mix well.
You can use sweetened condensed milk instead of sugar and milk powder.
Heat butter, fry nuts or raisins, pour to the paayasam.
French Toast

Ingredients
Bread slices 3
Milk or Coconut milk ½ cup
Egg 1
Sugar 1 table spoon or as desired
Cardamom 1 crushed
Oil or ghee for frying
How to prepare
Break egg into a bowl. Add milk, sugar and crushed cardamom. Mix very well. Chop the sides of bread slices and cut into triangle shape. Heat two tea spoons oil or ghee in a non stick pan. Dip bread slices in the above mixture and fry. Turn when one side is brown. Fry other side. Takes only few seconds.
