Mushroom And Baby Corn Manchurian



Ingredients
Mushrooms 1 1/2 cups chopped
baby corns 1 1/2 cups chopped
onion 2
ginger 1 " piece
green chillies 4
garlic and ginger paste 2 tsp
maida / all purpose flour 1/2 cup
cornflour 2 Tbsp
pepper powder 4 or more tsp
spring onion chopped 2 Tbsp
celery chopped 1 Tb
soya sauce 4 Tbsp
chilli sauce 1 tsp
tomato sauce 1 Tbsp
salt
oil



How to prepare
Mix maida, cornflour, garlic ginger paste, 1 tsp pepper powder in little water to make a thick paste. Add chopped mushrooms and baby corns in to this. Mix well.Heat oil in a frying pan and shallow fry them until slightly golden brown.
Chop onion and ginger. Heat oil , saute onion until lightly brown. Add ginger and green chilly slits. When the smell of ginger comes, add fried mushrooms and baby corns into this. Add celery, spring onion, 3 Tbsp soya sauce, chilli sauce,remaining pepper powder and stir well. Cover and cook on a low flame for a while. Stir again, remove from fire, add 1 Tb soya sauce and tomato sauce. If needed add salt. Cover and let it set for half an hour.

Ginger Chicken



Ingredients
Chicken 1/2 kg small pieces
garlic paste 1 tsp
ginger paste 1 tsp
ginger chopped 1 " piece
onions 2
tomato 1
soya sauce 2 Tbsp
fish sauce 1 tsp optional
pepper powder 3 tsp
green chillies 2 or 3 slit
chopped celery 1 Tbsp optional
turmeric powder 1/4 tsp
cardamom 1
cloves 2
cinnamon stick 1 " piece
cornflower 1 Tbsp
coriander leaves chopped few
water 1/2 cup
oil
salt



Method
Cut and clean chicken. Chop onions and tomato.Just crush cardomam, clove and cinnamon.
Cook chicken pieces with salt, turmeric powder and garlic ginger paste with water. When it is cooked remove chicken pieces and keep aside.
Add corn flour to the water remained (broth) after cooking chicken.
Heat oil. Saute onion until semi transparent. Add green chillies and chopped ginger and saute until lthe aroma spreads. Add tomato, celery, crushed spices , pepper powder and enough salt. Saute well and add chicken pieces and the broth mixed with cornflour. Stir well until it is thick. Add soya sauce and fish sauce. Stir well and remove from fire. Garnish with coriander leaves, chopped spring onion etc.
Restaurant ginger chicken has much darker color than this home made preparation. I used light soya sauce for preparing this.

Vegetable Noodles



Ingredients

Noodles packets 3
Beans 10
carrot 1
cabbage chopped 1 cup
capsicum chopped 1
onion 1
ginger julienned 1/2 inch
soya sauce 2 tb sps
pepper powder 2 tsp
oil
salt

Method
Cook the noodles in water with the seasonings available with it. Drain water and keep it aside.
Chop beans and carrot into thin long strips. (You can use other vegetables too)
Heat oil, saute chopped onion with ginger. Don't saute much as we do for curries. Then add chopped beans and carrot with it. Add little salt and stir until they are nearly cooked. Add cabbages, capsicum , pepper powder and soya sauce and stir. Add noodles too. Mix well. Have with tomato ketchup.

Chilly Fish



I had few salmon fillets in my freezer, and was wondering what to do with it. Since salmons are not much familiar here, no body liked it and said, it has a biscuit taste! A friend told making curry with salmon fish will taste good, but I postponed it for the next time, and just tried a chilly fish with the usual chilly chicken ingredients and it was worth , all the fillets disappeared! :) I used the same method to finish the leftover canned sardines after the roti canai event..:D

Ingredients and how to prepare
Fish fillets 6
onion 1
green chillies 2
ginger 1/2 " piece chopped
lemon juice 1/2 tsp
garlic paste 1 tsp
ginger paste 1 tsp
curry leaves few chopped
coriander leaves chopped few
soya sauce 1 tbsp
chilli sauce 2 tsps
tomato sauce 2 tbsps
pepper powder 1 or 2 tsps
chilli powder 1 tsp
corn flour 2 tsps
salt
oil

Cut fish fillets into small pieces. Marinate them with garlic and ginger paste, salt, pepper powder,chilli powder ,lemon juice ,half of the soya sauce and cornflour. Keep for half an hour. Shallow fry them. Chop onion and cut green chillies. Heat oil,(use the remaining oil used for frying ) saute onion, green chillies, curry leaves and ginger together for some time. Don't saute too much. Add fried fish, remaining soya sauce, chilli sauce and tomato sauce. Mix well, after adding coriander leaves remove from fire.
You can try this with prawns too.



Chilly Sardines

Sardines in tomato sauce 300 gms
onion 1 chopped
green chillies 2 chopped
ginger 1/2" piece chopped
garlic cloves 2 chopped
curry leaves few chopped
soya sauce 1 tbsp
chilli sauce 2 tsp
pepper powder 1 tsp optional
mustard seeds
oil

Heat oil, splutter mustard seeds, saute onion. when transparent add green chillies, ginger, garlic and curry leaves. Saute and add sardines with the sauce which it is soaked. Add the other sauces too. Mix well and remove from fire.

Chilly Cauliflower



Ingredients
Cauliflower 1 medium size
onion 1
ginger 1/2 inch piece julienned
green chillies 2 slit
pepper powder 2 tea spoons
garam masala 2 pinches
tomato sauce 2 table spoons
soya sauce 2 1/2 table spoons
chilli sauce 2 tea spoons
garlic and ginger paste 2 teaspoons
coriander leaves few chopped
egg 1 optional
cornflour 1/4 cup
salt

How to prepare
Remove cauliflower florets and soak them in boiled water for ten minutes. Mix cornflour,egg, garlic ginger paste, 2 table spoon soya sauce, chilly sauce, pepper powder, salt and garam masla in a bowl. Add little water to make a thick batter. Put the cauliflower florets in this and mix very well. Keep this for half an hour. Deep fry them.
Chop onion as big pieces. Take little oil from the remaining oil that we used for frying cauliflower. Heat oil, saute onion for few seconds. Don't saute too much as we do for curries. then saute ginger and green chillies, for few seconds too. Add fried cauliflower, tomato sauce and remaining soya sauce into this. Stir very well. Check salt. Garnish with coriander leaves.You can add capsicum and spring onions too.

Easy Chilly Chicken



Ingredients and method

Chicken pieces ½ kg
Garlic and ginger paste each 1 tea spoon
Chilli powder – 1 or ½ tea spoon
Corn flour 1 table spoon
Chilli sauce
Soya sauce
Tomato sauce
Egg 1
Lime juice half of one lemon
Capsicum one chopped – medium size pieces
Onion one medium size chopped
Ginger 1 inch julienned
Green chilly slit 2
Coriander leaves few chopped
Salt
Oil for frying

Marinate chicken with garlic and ginger paste,lemon juice, chili powder, ½ teaspoon chili sauce and two teaspoons Soya sauce, add salt if needed.
Keep refrigerated for one hour.

Mix corn flour, egg and the marinated chicken pieces together.
Add salt if desired.

Deep fry this in oil.
Heat pan.
Take one table spoon of oil from the oil used for frying.
Sauté onion.
When transparent, sauté ginger julienned , green chilies and capsicum.
Stir few seconds till the smell of ginger comes.
Add 2 teaspoons of Soya sauce, 1 teaspoon chilly sauce and 1 table spoon of tomato sauce.
Add fried chicken pieces and coriander leaves.
Mix well.
Add salt only if needed.
Do all these things on a low flame.
Remove from fire.
