Andhra Chicken Fry

I hadn't got a chance to taste Andhra chicken fry before, so am not sure about the look and taste of this dish.. :) I was happy when I tried this recipe, my family enjoyed it. I think this should be little more colorful.. Any way it reminded me of the "chicken chukka"that we would buy from the restaurant near by our residence in Dubai.



Ingredients
,
chicken 500 g
onion 2
garlic paste 2 tsp
ginger paste 2 tsp
turmeric powder 1/2 tsp
coriander powder 1 tsp
kashmiri chilli powder 2 tsp
garam masala powder 1 tsp
curry leaves few
green chillies 3
dry red chillies 2
salt
oil



How to prepare,
Heat oil.
Saute dry red chillies, chopped onion, garlic and ginger paste and green chillies slit until slightly brown.
Add chicken pieces with all powders and salt.
Pour little water and allow to cook.
Reduce water by cooking on a low flame, after chicken is cooked well, let all masalas coat on chicken pieces.
Garnish with coriander leaves.
Serve hot.

Chicken Sausage Stir Fry

Some people would discourage us from buying sausages, though we choose only chicken. They say only the 'unwanted parts' after slaughtering are used for making sausages. So we used it only once in a month but was difficult to avoid wholly since kids loved it very much.
This is the way the "husband cooks" when he gets a chance to enter kitchen in my absence. So am adding this to the 'bachelor's cooking'...

Shredded Chilly Chicken

We food bloggers are compelled to watermark our pictures more than once because of plagiarism! I found many of the blogger's food pictures are copied and re-watermarked! Recently a friend sent one link to a mallu site who has stolen some of the photos from the food blogs. They do not find any problem in republishing it even without changing my "simple and delicious!" watermark! Though we left comments there, we didn't get any response. Bloggers who wish to check there , please mail me for the link..
This is a simple chilly chicken recipe, which you can try out with chicken pieces from the leftover chicken curry. I had it once from a friend's house but when I wanted to make the dish once I couldn't contact her. So I tried it my self thinking of the ingredients she used to tell me.. I hope to post it again if I get the actual recipe.. This one is very good with chapatti breads and kubus.. You can make sandwiches also using this dish..



Chicken chilly ingredients
Chicken 1/2 kg
onion 2 medium size
green chillies 2
garlic and ginger paste 1 tsp
garam masala 1/2 tsp
pepper powder 2 tsp
turmeric powder 1/2 tsp
chilly powder if required
coriander leaves chopped 4 stalks
tomato sauce 2 Tbsp or as desired
soya sauce 1 Tbsp
salt
oil



How to prepare
Cook chicken in enough water with turmeric powder, salt and chilly powder.
When cooked , allow to cool, take out the chicken pieces.
Shred the chicken from the bones.
(Use the broth for making soup, will come with that recipe later, insha Allah)
Heat oil in a frying pan.
Saute chopped onions.
When it turns semi transparent, add garlic and ginger paste and saute until aroma comes.
Add chopped green chillies, garam masala powder, pepper powder and chicken into this.
Fry for few minutes on a high flame, stirring continuously.
Reduce heat when chicken is little browned.
Add sauces, mix well.
Add coriander leaves , mix and check salt. Adjust the taste as you desired by adding or reducing spices.
Serve hot with chapathi.

Chettinadu Pepper Chicken

Ask your kid what they think about you.You will get innocent answers.You might have heard the proverb " a friend in need is a friend indeed". But I don't believe it. Most of the time you may get flattering from them.Yeah, they are not dare to tell about your real behaviour, even if they don't like it.If they tell the truth, your friendship may break there at the moment.You may think she / he has hurt your feelings.May be some of you have such good friends other than this kind. Let me tell the truth, me too adjusting many sitting silently.Some times I would ask my kids (and H) what do they find bad in my conduct? I have learnt that is the way to correct my faults.Since kids are with us always, they notice our "outside" deportment and can easily tell about it.(People may have an inside & outside behaviours, at least we can change one).Kids below 10 and above 6 will be able to do it, I think these souls may start lying after ten, as they think saying good thing will make us happy.. :)
When my girl was 4 or 5 she used to play "Ashwamedham" which she learned from the show that was anchored by Mr.G.S.Pradeep, a famous Kairali TV artist. She thought about a lady, who was alive and from our family but I couldn't find out who was it from her answers. I just asked for a clue and she said "that lady is very useful to us, it is difficult for us to live without that lady in the house"! I felt like hearing the lessons in the primary school "Cow is a very useful animal, it gives us milk..." :) Yeah, it was about her mother and all mothers in the world! :) She might have changed her opinion when she grew (now 11) and sometimes says "ma, your character is very bad..." My strictness might have provoked her.. ;)
Don't think am deviating from the food talks. Talking too much about food (or other things) is really boring.(am not talkative, thats why I think so.. :) )So I stop here, and let's see the "chettinadu pepper chicken"...



Ingredients
Chicken pieces 1/2 kg
small onions 4
curry leaves 2 stalks
coriander leaves 2 Tbsp
coriander powder 1 tsp
pepper powder 3 tsp
turmeric powder 1/4 tsp
fennel seeds 2 pinches
cardamom 1 crushed
cinnamon sticks 1/4 " size 2 no.
cloves 3
salt
oil or ghee

Grind together,
Coconut grated 3/4 cup
pepper corns 2 Tbsp
garlic cloves 6 small
ginger 1/4 " piece



How to prepare
Heat little oil, put cardamom, cinnamon, cloves and fennel seeds.
After few seconds, add chicken with all powders and ground paste.
Cook this with enough water and salt.
When the chicken is done, reduce water on a low flame.
Heat a frying pan, pour little oil or ghee.
Saute chopped small onions, curry leaves.
When small onions are brown add the cooked chicken.
Stir slowly until the water evaporates completely and chicken is brown and dry.
Mix with coriander leaves, remove from fire.

This is the recipe of Mrs. Ammu Mathew, Vanitha. Small onions are my addition , so you can avoid it.Adding more pepper powder will give a nice dark color.

Orange Chicken

Orange chicken is a simple dish, chicken prepared in some thick orange juice with soya sauce and pepper.The ginger and garlic adds extra taste to the dish.And the golden color was too good.



Orange Chicken Ingredients
Chicken 1/2 kg boneless
orange juice 3/4 cup
pepper corns crushed 1 1/2 Tb
pepper powder 1 tsp
garlic pearls crushed 5 small size
ginger chopped 1 1/2 tsp
soya sauce 2 Tbsp
rice powder 1/2 cup
maida / all purpose flour 1/2 cup
baking powder 1/4 tsp optional
chilly powder 1 tsp
coriander leaves chopped 2 Tbsp
salt
oil



Preparation Method
Cook chicken with enough salt, water and pepper powder.
Make a medium thick batter of rice powder,maida, chilly powder, baking powder , salt and water.
Dip chicken pieces in this and deep fry them until red and crispy.
Heat little oil, add cruhsed pepper corns.
Then saute garlic and ginger in this.
When the smell comes, add soya sauce and orange juice. Mix well.
Put fried chicken pieces, coriander leaves and mix well adding enough salt if needed only.
Remove from fire.
If this becomes dry after few minutes add little more juice to the dish.
And if the orange is too sour add little sugar too.

Chicken Fingers

I would prepare this easy chicken fry using the chicken fingers recipe given by one of my senior friends who is an expert cook. Kids love this very much and of course you too will definitely love it! I have one other recipe for making fish fingers and will come with it later, insha Allah..



Ingredients used
Chicken breasts 2
lime juice 4 tea spoons
egg 1 beaten
red chilli powder 1/2 tsp
bread crumbs 1/2 cup
Salt and pepper to taste.



Method of preparation
S
hred the chicken breasts into thin long pieces.
Sprinkle salt, pepper, red chilli powder and lime juice on the chicken pieces and mix well.
Leave it for an hour in the refrigerator.
Dip in the beaten egg and roll over in the breadcrumbs.
Deep fry in oil , until they are golden and crisp.
Serve with lime wedges .

Ginger Chicken



Ingredients
Chicken 1/2 kg small pieces
garlic paste 1 tsp
ginger paste 1 tsp
ginger chopped 1 " piece
onions 2
tomato 1
soya sauce 2 Tbsp
fish sauce 1 tsp optional
pepper powder 3 tsp
green chillies 2 or 3 slit
chopped celery 1 Tbsp optional
turmeric powder 1/4 tsp
cardamom 1
cloves 2
cinnamon stick 1 " piece
cornflower 1 Tbsp
coriander leaves chopped few
water 1/2 cup
oil
salt



Method
Cut and clean chicken. Chop onions and tomato.Just crush cardomam, clove and cinnamon.
Cook chicken pieces with salt, turmeric powder and garlic ginger paste with water. When it is cooked remove chicken pieces and keep aside.
Add corn flour to the water remained (broth) after cooking chicken.
Heat oil. Saute onion until semi transparent. Add green chillies and chopped ginger and saute until lthe aroma spreads. Add tomato, celery, crushed spices , pepper powder and enough salt. Saute well and add chicken pieces and the broth mixed with cornflour. Stir well until it is thick. Add soya sauce and fish sauce. Stir well and remove from fire. Garnish with coriander leaves, chopped spring onion etc.
Restaurant ginger chicken has much darker color than this home made preparation. I used light soya sauce for preparing this.

Easy Chilly Chicken



Ingredients and method
Chicken pieces ½ kg
Garlic and ginger paste each 1 tea spoon
Chilli powder – 1 or ½ tea spoon
Corn flour 1 table spoon
Chilli sauce
Soya sauce
Tomato sauce
Egg 1
Lime juice half of one lemon
Capsicum one chopped – medium size pieces
Onion one medium size chopped
Ginger 1 inch julienned
Green chilly slit 2
Coriander leaves few chopped
Salt
Oil for frying

Marinate chicken with garlic and ginger paste,lemon juice, chili powder, ½ teaspoon chili sauce and two teaspoons Soya sauce, add salt if needed.
Keep refrigerated for one hour.

Mix corn flour, egg and the marinated chicken pieces together.
Add salt if desired.

Deep fry this in oil.
Heat pan.
Take one table spoon of oil from the oil used for frying.
Sauté onion.
When transparent, sauté ginger julienned , green chilies and capsicum.
Stir few seconds till the smell of ginger comes.
Add 2 teaspoons of Soya sauce, 1 teaspoon chilly sauce and 1 table spoon of tomato sauce.
Add fried chicken pieces and coriander leaves.
Mix well.
Add salt only if needed.
Do all these things on a low flame.
Remove from fire.

Chicken Pepper Fry



Ingredients and Method of preparation
Chicken – ½ kg
Garlic and ginger paste – 2 tsp
Turmeric powder – ¼ tsp
Coriander powder – ½ tsp
Pepper powder – 2 tsp
Pepper corns -1 tsp- crushed
Curry leaves-few chopped
Lemon juice – 1 tsp
Garam masala powder – ½ tsp
Fennel seeds powder – a pinch
Oil – 1 tbsp
Coriander leaves
salt
Mix everything with chicken pieces except oil and coriander leaves.
Heat pan
Pour oil.
Add the marinated chicken pieces with curry leaves.
Cover.
Stir occasionally.
Cook till the chicken pieces are done.
Remove the lid.
Stir on low flame till the masala cover the chicken pieces.
Garnish with coriander leaves,onion pieces etc.

Chicken 65



Again with the recipe of Mrs. Mano Saminathan.

Ingredients and preparation.

1/2 kg bone less chicken
1 teasp lime juice
1/4 teasp kesari powder
2 teasp chilli powder
1/2 of egg
11/2 tbsp cornflour
11/2 tea sp plain flour
1 tbsp soya sauce
1/2 tea sp pepper powder
1 tea sp ginger paste
1 tea sp garlic paste
1 handful of curry leaves
1/2 tea sp turmeric powder
1/4 teasp garam masala
enough salt
Mix well.
Marinate the chicken for 1 hour and deep fry them.

Kentucky Fried Chicken



This recipe is from Kairali TV fame
Mrs.Lakshmi Nair's Magic Oven. Though this chicken fry doesn't have the exact taste of real KFC, it is a hit among kids.

Ingredients
Chicken – 1 kg (Leg OR Breast pieces)
Ginger paste- 1 tbsp
Garlic Paste – 1 tbsp
Soya sauce – 1 tbsp
Chilli sauce – 1 tbsp
Tomato sauce – 1 tbsp
Pepper powder – 1 tsp
Salt – 1 – 1 ½ tsp
Water – 1 ½ cup

For the Batter :
Maida – 1 ½ cup
Egg – 1 no
Turmeric powder – ½ tsp
Water – 2 cup
Pepper powder – ½ tsp
Salt

For Coating:
Bread crumbs

For corn starch:
Corn flour – 2 tbsp
water - 1/4 cup

Oil for deep frying

How to prepare
Heat a kadai and add the chicken pieces, tomato sauce,soya sauce, chilly sauce, garlic & ginger pastes,pepper powder and salt.
Mix well.
Add water, cover and cook for approx. 10 minutes (till the chicken is 3/4 th cooked).
Put off the stove and remove chicken pieces and keep aside the stock.
In another bowl make a batter of maida, salt, pepper powder, haldi(turmeric), beaten egg and water .
Mix with hand for a loose batter.
Take breadcrumbs in another plate.
Dip the chicken pieces in the batter and then roll it on breadcrumbs till well coated.
Deep fry the chicken pieces till crisp and golden brown.
THE KFC IS READY.

In another pan heat the stock again, when boiling reduce flame and add the corn starch (add ¼ cup water to 2tbsp of corn flour).
Stir well.

Use this stock as the gravy and serve it in a bowl separately.
The stock is very tasty so instead of discarding the same can be used as a gravy or soup and can be served along with the fried chicken and may be toasted bread.

Naadan Chicken Fry



Ingredients
Chicken - 1/2 kg,
turmeric powder - 1 teaspoon,
red chilly powder - 1 1/2 tea spoon,
small onions - grated 4 (optional),
garlic - ginger paste - 2 tea spoons,
garam masala powder - 1/4 tea spoon,
fennel seeds powder - 1/4 tea spoon,
salt,
curry leaves,
oil for frying.

Method
Cut and clean chicken.
Mix chicken with powders, garlic ginger paste and salt.
Keep for one hour.
Heat oil in a pan.
Add marinated chicken pieces.
Add few curry leaves with the chicken.
Turn when one side is done.
Take when all the sides are done.
