White Bittergourd Pickle

White pickles are the best option for those who suffer gastric problems when having pickles containing lots of red chilli powder. Both of my kids hate spicy food, so I prepared this pickle for them to take to school as a side dish with rice . If you love much spiciness add lots of green chillies and black pepper corns.



Ingredients used,
bitter-gourd 3 medium size
garlic cloves 1/4 cup small
ginger chopped 1 Tbsp
green chillies 10 chopped
curry leaves few
pepper powder 2 tsp or more
vinegar 1 cup
mustard seeds 2 tsp
fenugreek seeds 1/4 tsp
water enough to cook
coconut oil
salt



How I prepared,
Wash bitter-gourds,remove seeds and cut into thin pieces.
Marinate with salt and keep in refrigerator for 2 hours.
Heat a heavy bottomed vessel, pour enough oil.
Allow mustard seeds to splutter, then put fenugreek seeds.
Saute green chillies, garlic cloves, ginger, curry leaves,pepper powder and bitter-gourd pieces together.
Saute for few minutes and then add little water enough to cook.
When it begins to cook, pour vinegar and boil.
Check salt, add more vinegar if needed.
Allow to cool, keep in an container.

Bittergourd Mango Dry Curry / Manga Pavakka Vattichathu


Bittergourd mango dry curry / Manga kaippakka vattichathu

Ingredients and Method
Bittergourd 1
raw mango / pachamanga 1
tomato 1/2
small onions 10 or onion 1
crushed garlic cloves 2
green chillies 2
curry leaves few
turmeric powder 1 tsp
chilli powder 2 tsp
coconut oil
mustard seeds
salt

Clean and cut bitter gourd into small pieces. Chop small onions, tomato and green chillies. Peel and cut mango. Cook everything together expect oil, curry leaves and mustard seeds in water enough to cover it. Cook and reduce water. Season with mustard seeds and curry leaves in oil. Dark green bitter gourd may taste more bitter than the light green one. So choose light green if you don't like more bitterness.If the mango is too much sour avoid adding the whole mango pieces.

Bittergourd Pickle / Kaippakka Achar

Ingredients
Bitter gourds 2
Mustard seeds 3 teaspoons
Asafetida powdered ½ teaspoon
Fenugreek seeds ½ teaspoon
Chilly powder 2 or 3 teaspoons
Vinegar 1 table spoons
Salt
Coconut oil 2 table spoons

How to prepare
Cut bitter gourd into thin pieces.
Dry roast 2 teaspoons mustard and ½ teaspoon fenugreek seeds.
Powder them.
Heat oil.
Let 1 teaspoon of mustard seeds to splutter.
Add powdered mustard, fenugreek and asafetida. Stir. Add salt, chilly powder and bitter gourd. Mix.
Stir for few minutes.
Add little hot water,3 table spoons of vinegar and mix well.
Close the pan and cook till the bitter gourd is done.
Then add remaining 1 table spoon of vinegar and enough salt.
Mix and remove from fire.

Bitter gourd / Kaippakka Pachadi



Ingredients
Bitter gourd 1 big
Cut bitter gourd into half in lengthwise. Make this as small pieces. Marinate this with half tea spoon chilly powder, ¼ tea spoon turmeric powder and salt. Fry these pieces in coconut oil.
Other ingredients
Coconut grated 1 cup
Curd half cup
Small onions 3
Green chilly 1
Mustard seeds half tea spoon for grinding
A pinch of cumin seeds

For seasoning
Mustard seeds, Curry leave red chilly, coconut oil.

How to prepare
Blend coconut with shallots, green chilly, mustard seeds, cumin and curd. Make a fine smooth solution with this. Pour this solution in to fried bitter gourd pieces, add enough salt and just heat this. Don’t boil. Season with mustard seeds, curry leaves, red chilly in coconut oil.

Kaipakka Varutharacha curry / bitter gourd coconut milk curry


Bitter gourd cooked in coconut milk

INGREDIENTS
Bitter gourd - 2 ,
onion -1,
tomato - 2,
turmeric powder- 1/2 teaspoon,
coriander powder - 2 tea spoon,
chilly powder - 1 tea spoon,
tamarind paste - 1 tea cup made with one lemon size tamarind,
grated coconut - 1/2 cup,
curry leaves - few,
green chilly - 3,
mustard seeds - 1 tea spoon,
garlic clove - 1 or small onions-3(chopped),
coconut oil - 1 table spoon, salt.
Heat 1 teaspoon coconut oil in a pan and fry the coconut adding 1/4 teaspoon fennel seeds until brown color. Grind this with enough water to make thick solution.

METHOD
Cut bitter gourd.
Add chopped onion, tomatoes, all the powders,salt,tamarind paste into it.
Add enough water just to cover the preparation.
Cook until three whistles in a pressure cooker.
Cool and add the blended solution.
Boil .
Heat oil, splutter mustard seeds, add curry leaves, slit green chillies and chopped garlic or shallots in to it.
Fry till the garlic is brown then add this into curry.
Have with rice!

Bitter gourd in coconut milk
We can cook bitter gourd in coconut milk following the same method. In the preparing steps, use coconut milk instead of blended solution of fried coconut. Using thick coconut milk gives a nice taste.Reduce water in the cooked bittergourd, just to avoid bitterness. Then add thick coconut milk. I make it usually with ready made coconut milk powder. This curry tastes well after two or three hours of cooking.

Kaipakka / Pavakka / bitter gourd curry



INGREDIENTS
Bittergourd(Pavakka) - 2 medium sized ones
Tamarind(Puli) - A lemon sized ball
Onion - 1 no
Small onions(Kunjulli) - A handful
Tomato(big) - 1 no
Green chillies - 2 nos
Curry leaves - A few
Coconut oil - 1 tbsp
Mustard seeds - 1 tsp
Turmeric powder - 1/2 tsp
Chilly powder - 1 tsp or as reqd

METHOD
1)Cut bitter gourd into thin square pieces.
2)Cook with salt, turmeric powder, chilly powder, green chilly, chopped onion and tomato in tamarind juice.
3)Cook till done.
4)Reduce water and bring to a thick consistency.
5)Heat oil in a pan.
6)Splutter mustard seeds.
7)Add curry leaves and pour this into the curry.:- If you need this curry to make ozhichukoottan type, don`t reduce water.
