Ulli / Onion Vada



Ingredients
Onion 3 big
Kadalamavu/Besan 1 cup
Ginger 1 inch piece
Green chilly 2 or 3 or chilly powder as desired
Curry leaves few
Coriander leaves few
Asafetida/kayam powder 1 pinch(optional)
Egg 1
Salt
Oil for frying



How to prepare

Chop onions as very thin slices.
Chop ginger, green chilies,coriander leaves and curry leaves.
Mix besan with the above ingredients.
Mix salt, asafetida powder and egg with this.
Mix well with hands.
If found watery add more kadalamaavu/Besan and mix.
Don’t make too hard to mix by adding more besan.
Make small balls , keep in one hand and press with the finger.
Drop this in hot oil and fry.
Turn occasionally.
Let it crisp and brown.

seens, i had ulli vada first time from a thattukada and went gaga over it. i don't need any side for this. the crispy vadas are enough.

Hello Seena,

Ur site is simply superb. Its very different from the normal ones which provide recipes. Urs with pictures help us to visualise when we read recipes itself. I started trying one by one in that. Made ullivada today and it was very tasty . I added Jeerakam also in that and that came out well .

Well I am looking for the recipe for beef fry and kerala porotta. Could you please share that if you have these two.

Hi there, hopped over from Foodie Blogroll. I think you have a fantastic blog here. You share all your recipes and not just photos.

This onion vada intrigues me because I just tried making some based on a recipe I found on a packet of gram flour. Over in UK, they call them onion bhajis (which I know the word bhaji is not right).

Could you please tell me why mine turned out a bit dry? Should I perhaps prefry (sweat) the onions first?

Thanks for the comment.
No need to fry the onions first. I think you have added more gram flour thats why it turned dry. If you found so, pls keep the mixture for a while, till the onion produces water and make the mixture wet.

Hi Seena,

I tried Ulli vada, it was very tasty.. but I suggest it will be more tastier if make with Maida rather than Kadalamavu.

Thanks for the suggestion, but kadalamavu is good to make vadas, using maida , it will become little stretchy and thick.. :)

No need, just avoid using eggs, you can make the same without eggs.. Some would make this with maida too.. :)
