Tomato / Thakkali pachadi

What about a lunch with rice, curd, green chillies, mashed tomatoes and little salt? It tastes wonderful and it is H's favourite! Some times when getting bored of our usual curries, I prefer taking the tomato,green chilly, curd plus salt mixture with well cooked rice. So some one loves those ingredients may surely love this pachadi too..!



Ingredients
Tomatoes 3
green chillies 3
salt

Crush,
small onions 4
ginger 1/4 " piece

Blend,
coconut grated 3/4 cups
curd 2 or 3 Tbsp
mustard seeds 1/2 tsp

Garnish,
curryleaves few
mustard seeds
red chillies
coconut oil



How to prepare
Chop tomatoes. Crush them with hand. Cook this with chopped green chillies , salt , crushed ginger and shallots with enough water to cover it.
Blend coconut with curd to a smooth paste. In the end add mustard seeds and just crush it.
Pour this solution to cooked hot tomato gravy. Mix well and remove from fire.
Season with curry leaves, mustard seeds, and red chillies in coconut oil.

Tomato Rice



This is the way my mother cooks tomato rice.I prefer eating this as a breakfast dish or evening snack with tea. This was my usual lunch during school days. You can use any oil instead of ghee for preparing this.

Ingredients and Method
Basmati rice 2 cups
Cook rice with little salt.Drain and keep aside.

Chop 4 medium size tomatoes, 2 green chillies and 2 onions.
Heat 2 table spoons of ghee in a pan.
Put 1 teaspoon mustard seeds and 1/4 teaspoon cumin seeds.
Let it splutter.
Then saute onion in this.
Add 2 teaspoons garlic and ginger paste with 2 pinches of fennel seeds powder.
Stir for few seconds, add chopped tomatoes and 1/2 cup chopped coriander leaves into this.
Add 1/2 teaspoon turmeric powder, 2 teaspoons (or according to taste) red chilly powder and salt into this.
Stir well.
Add 1/4 cup water for cooking tomatoes.
When tomatoes are cooked well, mix cooked rice with this. Mix well.
If you like , sprinkle little garam masala over this.

Tomato Pickle/Thakkali Achar



Ingredients and method

Tomato - 1/2 kg
Garlic paste - 1 tsp
Ginger paste - 1 tsp
Turmeric powder - 1/4 tsp
Chilly powder - 2 tsp
Fennel seeds(Perinjeerakam) powder - 1/2 tsp
Green chillies - 3 nos
Curry leaves - A few
Coconut oil - 3 tbsp
Mustard seeds - A little
Vinegar - 2 tbsp
Sugar - 1/4 tsp

1)Clean and cut tomatoes into fine pieces.
2)Mix with salt and keep it for half an hour.
3)Grind together chillies and curry leaves.
4)Heat coconut oil in a pan or a kadai.
5)Splutter mustard seeds.
6)Add ginger paste, garlic paste, fennel seeds powder and green chillies-curry leaves paste.
7)Stir for 2 mins.
8)Add chilly powder and turmeric powder. Stir well.
9)Add tomato.
10)Allow it to cook.
11)Add salt, if reqd.
12)Add vinegar.
13)Cook, until this becomes thick and gets a consistency of that of jam.:- Serve with dosas or can be used as a side dish for rice.

Tomato chammanthi / chutney



INGREDIENTS
Tomatoes - 2,
small onions - 7,
tamarind - one small goose berry size,
ginger - one inch piece,
red chillies - 5,
curry leaves - few,
coconut oil - 1 table spoon,
salt.

METHOD
Heat oil in a pan.
Cut tomatoes.
Add peeled small onions and red chillies in to the oil and fry.
When they change color add chopped tomatoes.
Fry for a while.
Grind this with all the other ingredients.
Good with dosa, idli and rice.

Thakkali Curry / Tomato Curry


INGREDIENTS
Tomato - 4,
Onion - 1 ,
Green Chilly - 2,
Turmeric powder - 1/2 tea spoon,
Chilly powder - 1 tea spoon,
Coconut milk - 1 cup thick or blended coconut - 1/2 cup with one cup of water,
Salt,
Coconut oil,
mustard seeds,
curry leaves.

METHOD
Heat oil in a pan.
Let the mustard seeds splutter.
Add chopped onion.
Stir till transparent.
Add chopped tomatoes, slit green chillies, powders, salt , curry leaves and cook in 1/2 cup water till done.
Add coconut milk or blended coconut.
Remove when start boiling.
Have with rice.
