Cauliflower Kuruma

Ingredients
Cauliflower florets 2 1/2 cups
onions 2
tomato 1
coriander powder 2 tsp
chilli powder 1/2 or 1 tsp
turmeric powder 1/4 tsp
coriander leaves chopped few
salt
oil
Grind together to a paste,
garlic cloves 4
ginger 1 " piece
green chilly 1
black pepper corns 1 tsp
fennel seeds 1/4 tsp
cardomam 1
cinnamon stick 1 " piece
cloves 2
Blend together to a smooth paste,
coconut grated 1/2 cup
cashew nuts 3
water enough
How to prepare
Boil water, put cauliflower florets in it for few minutes.
Chop onion and tomato. Heat oil saute onion first, then add the ground paste, saute until the raw smell goes.
Add all the powders and stir. Mash tomato pieces with hand and add it. Add salt and cauliflower florets. Mix well. Add 1/2 cup water and cook the florets well in this. Stir occasionally.
When the cauliflower is cooked, add the blended paste of coconut and cashewnuts. Mix well and let it boil on a low flame. When the oil floats on top, remove from fire, garnish with coriander leaves. Keep this for 1 hour before you serve, it will become thick.

Cabbage Thoran - Two Types

Cabbage stir fry / thoran Ingredients and method
Cabbage 1/4 kg
onion 1
coconut grated 2 tbsp
green chillies 2
curry leaves few
ginger 1/4 inch piece
turmeric powder 1/4 tsp
mustard seeds
coconut oil
salt
Clean and chop cabbage finely. Chop onion into very finely. Cut green chillies length wise into two. Crush ginger. Mix coconut, green chilies,ginger, turmeric and salt together.
Heat oil, allow mustard seeds to splutter. Then saute onion for few seconds.Add the mixture and stir well. Add cabbage too and mix. Cook on a low flame, keeping the pan closed. Stir occasionally. If needed sprinkle little water. You can add egg in this too if you like.. :)

Red cabbage keeps changing it's color depending on the ingredients you used to cook with it. When I added egg, the egg white (albumen) changed to green color. It is because of the alkaline nature of egg white and red cabbages usually alters alkaline substances green.This is because red cabbage contains a pigment called anthocyanin. I think the other ingredients like egg yolk which are neutral, made red cabbages retain it's purple color.

Cabbage Pickle

Cabbage Achaar / Pickle Ingredients
Cabbage 1/4 kg
shallots / chuvannulli 10
garlic cloves 6
ginger 1 inch piece
turmeric powder 1 tsp
chilly powder 2 or 3 tsps
green chillies 4
curry leaves chopped few
mustard seeds /kaduku 2 tsps
fenugreek / uluva 1/2 tsp
coconut oil 2 Tbsp
vinegar 3 Tbsp or as desired
salt
How to prepare
Chop cabbage finely. Chop garlic and shallots length wise. Peel and chop ginger too. Cut green chillies into big pieces. Heat oil splutter mustard seeds and fenugreek seeds. Then add garlic, ginger , green chillies, curry leaves and all the powders. Saute for 1 minute. Then add cabbage , salt and 1 Tb sp vinegar. Stir well and cook covered on a low flame stirring occasionally. When the cabbage is cooked add remaining vinegar, check salt and remove from fire..
We cannot store this for long time. After one day, I kept it in fridge. Have to add more oil to keep it out side..
Cauliflower Vada / Fritters

Ingredients
cauliflower florets 3 cups
onion 1
ginger 1" piece
green chillies 3
garlic paste 1 teaspoon
coriander leaves chopped 1/2 cup
curry leaves few chopped
turmeric powder 1/4 teaspoon
chilly powder 1 teaspoon
cumin 1/4 teaspoon or cumin powder 1 pinch
asafoetida powder 1 pinch
besan / kadalamaavu 3/4 cup
rice powder 1/4 cup
salt
oil
How to prepare
Boil water and soak cauliflower. Drain water after 10 minutes, then chop cauliflower. Chop onion, green chillies and ginger . Mix all the ingredients together except oil. Sprinkle little water and mix again. Make small vadas. Vadas must not be thick. If thick, inside of vadas will remain raw. Deep fry vadas. Have with hot sauce.

Ingredients
Cauliflower 1 medium size
onion 1
ginger 1/2 inch piece julienned
green chillies 2 slit
pepper powder 2 tea spoons
garam masala 2 pinches
tomato sauce 2 table spoons
soya sauce 2 1/2 table spoons
chilli sauce 2 tea spoons
garlic and ginger paste 2 teaspoons
coriander leaves few chopped
egg 1 optional
cornflour 1/4 cup
salt
How to prepare
Remove cauliflower florets and soak them in boiled water for ten minutes. Mix cornflour,egg, garlic ginger paste, 2 table spoon soya sauce, chilly sauce, pepper powder, salt and garam masla in a bowl. Add little water to make a thick batter. Put the cauliflower florets in this and mix very well. Keep this for half an hour. Deep fry them.
Chop onion as big pieces. Take little oil from the remaining oil that we used for frying cauliflower. Heat oil, saute onion for few seconds. Don't saute too much as we do for curries. then saute ginger and green chillies, for few seconds too. Add fried cauliflower, tomato sauce and remaining soya sauce into this. Stir very well. Check salt. Garnish with coriander leaves.You can add capsicum and spring onions too.

Heat little oil in a pan.
Boil water.
Heat oil.
Blend fried coconut with little water.
