This Carrot Sarkkara Cake which I had tried a few months ago, kids thought it is chocolate, seeing the outer part! The carrots disappeared when the cake was done, so there was no worry for them about eating it. Everyone who tasted the cake couldn't find the carrots in it.. :) I hope, this would be a healthy option for those who try to avoid ordinary sugar in their cooking. Moreover, addition of carrots make it more healthy..

What I used for making this Carrot sarkkara cake
Carrot 2 cups grated
maida 2 cups
baking powder 1 3/4 tsp
jaggery 4 big blocks
ghee or butter 3/4 cup
eggs 2
cardamom powder 3/4 tsp
cashew nuts few
essence as per taste

How I prepared
Melt jaggery in very little water. If impurities are there, strain and allow to cool.
Beat egg and ghee / butter together. Add baking powder , maida, carrots,cardamom powder, essence and melted jaggery into it and mix together in the food processor without forming lumps.

Grease a non stick pan.Add the above mixture into it and place the cashews over it.
Bake in a preheated oven for 45 minutes in 175 degree C. Or bake until done.

Glad to know you are going to make it! about jaggery , usually it is availale in block form. I don't know how you get there. Here we get bigger than the sarkkara blocks we get in Kerala. So if you get small pieces, use double amount. It may be approx. one cup , I think. :)

That looks wonderful. I had once tried using melted jaggery for baking cakes but it didnt turn out well. So thought jaggery cant be used for baking. Yours' look so yummy! :-)

Since I dont have an oven at my home , is der any other option, rather than baking it in an ove?
I think you should use an oven for making this.It is difficult to get the same texture if you cook on ordinary stove top..
